Mexican Breakfast... For Dinner!

We always enjoy a little B4D (read Breakfast for Dinner), but this time I put a little flair in it to shake things up!  


Huevos Rancheros turned out great so I thought I'd share...  I started out following this recipe, but quickly realized I had about 2 of the ingredients listed, so I improvised.


What you need:
4-6 Eggs
Tortillas (I used flour - recipe called for corn)
Black Beans (recipe called for pinto)
Salsa (recipe called for green salsa)
Scallions
Tomatoes
Juice of 1/2 lemon
Cheese
Drain Beans and add 1/2 cup salsa, mix well.  Place tortillas on a baking sheet then spread mixture evenly over 4-6 tortillas and sprinkle with cheese.  Put in 400 degree oven for about 5-10 min (until cheese is melted and beans are warm.)  
Chop up tomatoes and scallions and garlic.  Mix together and squeeze lemon juice in.
  
Make eggs over easy and place on top of the bean mixture.  

Top with the tomato mixture and enjoy!



I also made some mexican rice on the side:
1 Cup Brown Rice - cook as directed but add 1/2 to 3/4 cup salsa.

Easy Peasy but SO GOOD!!
